Ingredients
  • 4 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 lb shiitake mushrooms in brine (drained, rinsed, and patted dry)
  • 2 tablespoons chopped parsley

Instructions
  • In a bowl, mix olive oil, vinegar, salt, pepper, garlic powder, and thyme. Toss the drained and rinsed shiitake mushrooms in the mixture.
  • Bake for 20 minutes until tender.
