Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 tbsp vegan Worcestershire sauce
- 1 cup dry red wine (or broth)
- 1 tsp dried thyme & rosemary
- 1 tsp salt, ½ tsp black pepper
- 2 cups veggie broth
- 2 tbsp cornstarch
- 1 lb red potatoes, halved or quartered
- 1 lb baby carrots
- 18 oz MIDITER Organic Shredded Young Jackfruit in Brine, drained

Instructions
- Preheat oven to 400°F (200°C).
- Sauté onion and garlic, then add jackfruit with herbs & seasonings.
- Add cornstarch mixed with veggie broth and simmer for 5 mins.
- Pour the mixture over potatoes and carrots, bake for 40 minutes until tender.
- Serve with jackfruit on top and remaining sauce as gravy.
