Jackfruit Pot Roast
Ingredients
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp vegan Worcestershire sauce
  • 1 cup dry red wine (or broth)
  • 1 tsp dried thyme & rosemary
  • 1 tsp salt, ½ tsp black pepper
  • 2 cups veggie broth
  • 2 tbsp cornstarch
  • 1 lb red potatoes, halved or quartered
  • 1 lb baby carrots
  • 18 oz MIDITER Organic Shredded Young Jackfruit in Brine, drained

Jackfruit Pot Roast
Instructions
  • Preheat oven to 400°F (200°C).
  • Sauté onion and garlic, then add jackfruit with herbs & seasonings.
  • Add cornstarch mixed with veggie broth and simmer for 5 mins.
  • Pour the mixture over potatoes and carrots, bake for 40 minutes until tender.
  • Serve with jackfruit on top and remaining sauce as gravy.
