Ingredients
  • 50g unsalted butter
  • 100g light brown sugar
  • 6 MIDITER Pineapple Rings
  • 6-7 glacé cherries
  • 100g unsalted butter
  • 100g caster sugar
  • 100g self-raising flour
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract

Pineapple Upside-Down Cake
Instructions
  • Prepare the caramel base by melting butter with brown sugar, then pour into a greased cake tin. Arrange pineapple rings and cherries on top.
  • Mix the batter by beating butter, sugar, eggs, vanilla, flour, baking powder, and milk until smooth. Pour over the pineapple rings.
  • Bake at 180°C (350°F) for 30-35 minutes, cool slightly, then invert onto a plate to serve.
