Ingredients
  • 1 tablespoon cooking oil
  • 1 teaspoon sesame oil
  • 1 can lotus root in brine, drained
  • 3 tablespoons dashi broth or water
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • Shichimi Togarashi for garnish

Stir-Fried Japanese Lotus Root
Instructions
  • Sauté lotus root in cooking and sesame oil until lightly browned.
  • Stir in dashi broth or water and cook until most of the liquid evaporates. Add sugar, stirring to coat.
  • Mix in soy sauce and cook until absorbed, with lotus root turning golden brown, about 1 minute.
