Ingredients
  • 280g Quorn Vegan Nuggets
  • 600g mixed root vegetables (e.g., potatoes, parsnips, carrots)
  • 200g edamame beans
  • 100g fresh spinach
  • Oil, salt, pepper
  • 2 dl of water
For the sauce:

  • 2½ tbsp corn starch
  • 4 tbsp rice or white wine vinegar
  • 4 tbsp sugar
  • 4 tbsp ketchup
  • 1 tsp salt

Instructions
  • Cut root vegetables into strips, season with oil, salt, and pepper, and roast at 200°C for 20 minutes, turning them often to prevent burning.
  • Cook the vegan nuggets as per the package instructions.
  • Boil sauce ingredients, thicken with corn starch, and let it cool. Layer the cooked vegetables, edamame, spinach, and nuggets in a bowl, then pour over the sauce.
